Ingredients
- 1 cup mixed berries (strawberries, blueberries, blackberries)
- 1/2 small beet, peeled and chopped (about 1/3 cup) - can use pre-cooked for convenience
- 1/2 medium apple, cored and chopped
- 1 tablespoon fresh lemon juice
- 1/2-inch piece fresh ginger, peeled and grated
- 1 cup coconut water
- 1 tablespoon ground flaxseed
- 1 teaspoon raw honey
- 1/4 teaspoon vanilla extract
- 1 tablespoon collagen peptides (optional, for additional skin support)
- Pinch of sea salt
- 4-5 ice cubes

Instructions
1. If using raw beet, chop into small pieces for easier blending.
2. Add coconut water to the blender first.
3. Add mixed berries, chopped beet, apple, lemon juice, grated ginger, flaxseed, honey, vanilla extract, collagen peptides (if using), and salt.
4. Add ice cubes.
5. Blend on low speed initially for 15 seconds to break down the beet pieces.
6. Increase to medium speed for 30 seconds, then high speed for 60-90 seconds until completely smooth. Beets require thorough blending for a smooth texture.
7. If the mixture is too thick, add additional coconut water 1 tablespoon at a time until desired consistency is reached.
